Raw food recipes I also am very much into raw food, eating close to 100% raw and Tati is 95% vegetarian. So we are posting a few of our favorite recipes here. Bon appetitit!
Key Lime Pie (I modified by using raisins)

The Crust:
2 cups pecans, soaked
1/2 cup raisins

The Filling:
1 avocado, pitted an peeled
1/2 Cup coconut water
Pulp of 1 young coconut
1/3 Cup lime juice
Grated peel of half an organic lime
1 teaspoon vanilla extract
1/4 teaspoon Celtic salt
1/2 Cup raisins
2 tablespoons flaxseeds

Chocolate chip cookies

4 cups almonds soaked
1 cup filtered water
3 cups dried organic apricot
1 cup raw cacao nibs

Put all ingredients except cacao in cuisinart or food processor and mix. Mix in cacao last so that you end up with chips like a Chocolate chip cookie.

Dehydrate until desired consistency. Probably 3 hours or less.
Make into thick squares as well and have like a granola bar. Versatile and simple

Chocolate Ice Cream (variation on above)

2.5 cups Organic dried apricot
2 cups almonds soaked
3 cups filtered water
1 cup raw cacao nibs

Put all ingredients except cacao in cuisinart or food processor and mix. Mix in cacao last. Freeze for a few hours for ice cream consistency. Then refrigerate so it doesn't stay too hard.

Yam cookies
1 Yam/sweet potatoe (peeled/raw)
1 acorn squash (peel and remove seeds)
3 carrots
1.5 cups water
1/2 cup almonds

Cut yam/acorn squash into cubes. Then mix in cuisinart w. almonds.
Pour water into Vitamix, then add carrots. Mix. Then add the rest to the Vitamix.
Dehydrate in the shape of cookies, and sprinkle cinnamon on them.

 Tahini 

2 cups filtered water
½ medium sized onion
2 T olive oil
3.5 cups sesame seeds
1.5 T salt

Mix water, onion, olive oil, and salt in vita mix then add sesame seeds last after the first ingredients are mixed so that it doesn’t get heated and have a burnt taste. If you have a food processor that doesn’t break down the seeds or are trying to do this in a blender, use more water which will make the seeds liquefy and the consistency will be more watery but that’s okay too.

 

 

Raw food Pizza
 
Crust
2 cups soaked almonds
1 cup sunflower seeds soaked
1/2 cup golden flax
3/4 cup olive oil
2 medium tomatoes
1 T salt
1 red pepper
2 cups sun dried tomatoes
soak water from sun dried tomatoes

1- Almonds and sunflower seeds mix in cusinart.
2- Ground flax seeds into meal in Vita mix. Set aside
3- All the rest of the ingredients go into the Vita Mix (take flax meal out) Mix into liquid.
4- Put half of the almond-sunflower seeds into vita mix. Then since it will be full or close take out about half of the contents of vita mix. Mix the rest of the almonds-sunflower seed mix in vita mix. Mix in a large bowl the remaining contents of Vita mix plus other half of mix and also the flax meal with a wire wisk. Spread on 3-4 teflex sheets in dehydrator.
5- Dehyrdrate 145 for 3 hours and then lower the temperature to 125 for a few hours then after 6-7 leave at that temperature or lower to 115.
6- When it dries enough, turn over and remove teflex.

Tomato Sauce---
2 tomatoes
1 Red pepper
2 cups sun dried tomatoes soaked (10-30 minutes)
soak water from sun dried tomatoes
1/2 T marjoram or oregano
1/2 T Italian seasonings
1/3 T salt (real salt or similar)
Pinch cayenne
1/4 cup Olive oil

Mix in Vita mix under liquid.

Cheese for pizza---

3 cups walnutes soaked for 2 days
2 cups sunflower seeds soaked 1 day or less
1 T salt
1/2 T Dill
1/2 T thyme
1/2 T Italian seasons
1 cup water
10 sun dried tomatoes soaked for a few minutes (30 minutes or less)

1- Mix walnuts/sunflower seeds in cuisinart
2- Mix all the rest of the ingredients in the Vita mix
3- Add the walnuts/sunflower seeds to vita mix

When crust is ready add cheese then tomato sauce and your choice of toppings. (onions, black olives...)
